Oat flakes with baked banana and blueberries

Ingredients for 1 servings:

  • 40 g oat flakes
  • ½ tsp baking powder
  • 0.33 tsp cinnamon
  • 0.33 tsp nutmeg
  • 100 ml milk
  • 1 egg(s)
  • 1 tsp honey
  • 1 tsp coconut oil
  • 1 medium-sized banana(s) (approx. 150 g)
  • 50 g blueberries
  • 1 tbsp peanut butter, optional
  • 50 g yogurt, Greek, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat the oven to 150°C. Combine the oats, baking powder, cinnamon, and nutmeg in a bowl. Mash 1/3 of the banana. Then add the milk, eggs, honey, and the mashed banana to the dry ingredients and mix everything together. Slice the remaining banana. Grease an ovenproof glass dish with coconut oil and place half of the sliced ​​bananas and the blueberries on the bottom. Pour the batter over the bananas and top with the remaining bananas and blueberries. Bake for 15-20 minutes (or until golden brown). Serve with a dollop of peanut butter or yogurt, if desired—or enjoy it as it comes out of the oven.
