Carrot salad made from cooked carrots

Ingredients for 4 servings:

  • 1 kg carrot(s)
  • 1 medium-sized onion(s), finely diced
  • ½ bunch parsley, finely chopped
  • e.g. walnut vinegar
  • e.g. sunflower oil
  • salt and pepper
  • possibly spice mixture with garden herbs

Instructions

Working time approx. 25 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 10 minutes; Total time approx. 5 hours 35 minutes

Peel the carrots, cut them into 5 mm thick slices, and boil them in salted water for about 10 minutes until al dente. Drain and let cool. Then season with walnut vinegar, oil, and spices to taste and let stand for a few hours. You may need to adjust the seasoning if necessary. The carrots absorb a lot of the flavor.
