Ingredients for 2 servings:
- 265 g chickpeas (drained weight)
- 200 g feta cheese, vegan (see tip)
- 1 bell pepper
- 1 onion(s), red
- ½ cucumber(s)
- 2 tbsp olives, sliced
- 2 tbsp parsley, chopped
- 100 ml olive oil
- 50 ml white wine vinegar
- 1 tbsp lime juice
- 1 ½ tsp salt
- 1 tsp pepper
- ½ tsp chili flakes
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes

Drain and rinse the chickpeas. Drain in a colander and place in a large bowl. Quarter the cucumber lengthwise and slice. Add it to the bowl along with the sliced olives. Dice the bell pepper and feta, quarter the onion lengthwise and slice. Add it to the bowl along with the chopped parsley. Finally, mix the dressing ingredients and stir in.
