Peel the potatoes and grate them into very thin slices, drizzle with olive oil, and season to taste, e.g., with garlic salt, chili, and Mediterranean herbs. Lay out 2-3 slices of prosciutto, overlapping, and arrange the potato slices on top of the prosciutto, leaving some ham hanging over the bottom. Fold the excess ham over the potatoes and roll them up. Place the roses in a muffin tin and bake at 140-160°C (convection oven) for 20-30 minutes. The potatoes should be cooked through on the inside and the exposed part should be crispy.
