Ingredients for 2 servings:

  • 4 Debreczin sausages
  • 1 onion(s)
  • 2 bell peppers
  • 4 spring onions
  • 1 handful of cocktail tomatoes
  • 4 eggs
  • 1 handful of cheese, grated
  • salt and pepper
  • 1 handful of chives

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 17 minutes

Finely chop the Debreziner, onion, bell pepper, and spring onions. Heat butter in a pan and fry the Debreziner with the onion, taking care not to brown the onion. Then add the bell pepper, the whole tomatoes, and the spring onions, and sauté everything until lightly browned. The vegetables shouldn’t be overcooked so they stay crunchy and retain their flavor. Next, add the eggs, but don’t overmix them; the yolks should remain whole. Sprinkle the grated cheese evenly over the top. Season with salt and pepper and garnish with chives. Serve with black bread.
