Salmon with herb crust from the oven

Ingredients for 3 servings:

  • 600 g salmon, without skin
  • 50 g white bread, stale (from the day before)
  • 50 g butter, soft
  • 2 tbsp parsley, chopped
  • 2 sprigs of dill
  • ½ stalk rosemary
  • 1 garlic clove(s)
  • 1 organic lemon(s)
  • Salt and pepper from the mill

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat the oven to 200 degrees Celsius. Line a baking sheet with parchment paper. Finely chop the garlic clove, rosemary, parsley, and dill. Wash the lemon, zest, and squeeze the juice. Crumble the white bread, mix with the herbs, lemon zest, garlic, and softened butter, and season with salt and pepper. Season the salmon fillet with salt and pepper and drizzle with lemon juice. Place on the baking sheet, brush with the herb mixture, press it down lightly, and place in the hot oven for about 20 minutes. Serve with a salad and pasta.
