Stuffed onions with goat cheese

Ingredients for 4 servings:

  • 4 large onions
  • 100 g cheese, diced (young goat cheese)
  • 1 egg(s)
  • 8 olives, black, finely diced
  • ½ tsp thyme, fresh (or 0.25 tsp dried)
  • 2 tbsp parsley, chopped
  • Salt
  • pepper
  • 2 tbsp oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the brown skin off the onions and boil them in salted water for about 15 minutes. Rinse with cold water. Carefully scoop out the insides of the onions (they should come out naturally), leaving a solid shell. Place the onion skins in an oiled baking dish. Finely dice the insides and mix with the goat cheese, olives, and herbs. Season well. Stuff the onion skins with this mixture. Bake at 200°C for about 30 minutes. They taste great both hot and cold (I can’t decide which is better). Either as a side dish to simply roasted meat without too strong a flavor contrast, or as a meal with plenty of fresh bread.
