Baked turkey breast fillet with peppers, onions and mozzarella

Ingredients for 2 servings:

  • 2 turkey breast fillets
  • 2 bell peppers, yellow and red
  • 2 small onions
  • 1 jar tomato sauce
  • 2 balls of mozzarella
  • some fat, for the casserole dish

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Preheat oven to 200°C (180°C fan/convection oven). Grease a baking dish well. Rinse the meat all over under cold running water and pat dry. Peel the peppers and remove the cores. Cut into thin strips. Peel the onions and slice them into thin rings. Thinly slice the mozzarella. Spread 2 tablespoons of tomato sauce on the bottom of the baking dish, place some of the peppers and onions on top. Place the meat on the bed of tomatoes and vegetables and spread the remaining tomato sauce on top. Arrange the remaining peppers and onions on top and top with the mozzarella. Drizzle the cheese with a little tomato sauce. Bake on the second rack from the bottom for approx. 35-40 minutes. If the mozzarella starts to blacken too soon, cover the casserole with aluminum foil and finish baking. For a lunchtime variation, fresh gnocchi can also be baked in the tomato sauce.
