Ingredients for 1 servings:

  • 700 g gooseberries (cleaned)
  • 300 g banana(s) (peeled)
  • 1 lemon(s)
  • 500 g gelling sugar, 1:2
  • possibly banana liqueur

Instructions

Working time approx. 40 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 40 minutes

Wash and hull the gooseberries. Roughly puree the fruit with a hand blender and place it in a saucepan. Slice the bananas and mix with the gooseberries. Mix the lemon juice into the fruit puree. Add the gelling sugar, mix, and let stand, covered, for about 2-3 hours. Boil for 3 minutes, stirring constantly, then pour into jars while still hot. Turn the jars upside down for 5 minutes. If you like, you can add 3-4 tablespoons of banana liqueur at the end. This recipe makes 5 jars of about 300g each.
