Orange marmalade with chestnuts, chocolate and orange liqueur

Ingredients for 6 servings:

  • 750 g orange(s) (fillets with juice), net weight
  • 1 lime(s), juice
  • 200 g chestnuts, cooked
  • 50 g chocolate shavings (77% cocoa content)
  • ½ tsp orange peel, dried, ground or grated, untreated
  • 100 ml Cointreau
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Els’chen’s best orange jam

Fillet enough oranges to make 750g with the reserved juice. Finely puree the chestnuts with the orange juice, add the orange segments, and coarsely puree. Bring to a boil with the lime juice, orange zest, and preserving sugar and simmer for 4 minutes. Add the chocolate shavings, stir, and add the Cointreau. Then serve.
