Gluten-free chocolate mousse

Ingredients for 1 servings:

  • ½ grapefruit(s) approx. 160 g
  • 200 g tofu, natural
  • 60 g powdered sugar
  • 1 pinch of salt
  • 50 g chocolate, bitter 85%

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Fillet the grapefruit and place it in a tall bowl with the tofu, powdered sugar, and salt. Grind the chocolate with an almond mill, then add it to the mixture and gently puree from top to bottom with an electric blender. Season to taste, adding more sugar if necessary. Refrigerate. Note: Use oranges or tangerines instead of grapefruit. Rum (54%) is also recommended; use approximately 100 g, as the creamy consistency is important. My own recipe.
