Ingredients for 4 servings:
- 200 g meringue(s) (equivalent to approx. 6 – 8 pieces)
- 500 g raspberries (frozen), unsweetened
- 500 ml whipped cream, unsweetened
- 4 cl raspberry brandy or Grand Marnier
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
frozen raspberries with cream and meringue
Whip the cream without adding any additional sweetener until almost stiff (the meringues are already sweet enough). Roughly crumble half of the meringues into a glass bowl. Spread half of the frozen raspberries on top and drizzle with half of the alcohol. Then spread half of the whipped cream on top. Layer the remaining half of the ingredients in the same way: meringue, raspberries, alcohol, and cream. Now let the whole thing sit in the refrigerator for two hours. The raspberries will thaw slowly in the refrigerator. The raspberry juice and alcohol will soak the meringue, while the cream will absorb the cold and freeze slightly. The whole thing is reminiscent of a sweet, fruity semifreddo and is absolutely addictive.
