Savory muffins with toast

Ingredients for 1 servings:

  • 12 slice(s) of toast, e.g. rye toast
  • 1 tomato(s)
  • 4 slices of cooked ham
  • 4 eggs
  • 100 g Emmental, grated or other hard cheese
  • 100 ml cream
  • some chives, cut into rolls or frozen
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

for buffets or breakfast, makes 12 delicious toast cakes

Trim the edges of each slice of toast and flatten them slightly with a rolling pin. Grease a muffin tin well and carefully place the toast in it. Cut the tomato into small pieces and briefly place them on a piece of kitchen paper to absorb the liquid. Dice the cooked ham. Whisk together the eggs and cream and season with salt and pepper. Stir in the cheese and some of the chives. Mix some of the cheese mixture with the tomatoes and ham and fill the toast baskets. Then pour the remaining egg mixture over the top. Place the muffin tin on the middle rack of a preheated oven at 180°C (top/bottom heat) and bake for about 20 minutes. Garnish the toast tarts with chives and serve with salad.
