Tomato salad with basil vinaigrette

Ingredients for 4 servings:

  • 750 g tomatoes
  • Salt
  • pepper
  • 2 bunches of basil
  • 1 bunch of spring onions
  • 4 tbsp vinegar (white wine vinegar)
  • 1 tsp sugar
  • 1 tsp mustard
  • 8 tbsp oil

Instructions

Wash the tomatoes, slice them, and season with salt and pepper. Wash the basil and spin it dry; set aside some leaves and chop the others. Trim and slice the spring onions, and scatter them over the tomatoes. Mix the chopped basil with the white wine vinegar, pepper, salt, sugar, and mustard, then stir in the oil. Drizzle the dressing over the tomatoes and garnish with the basil leaves to serve. Tip: You can also serve sliced ​​mozzarella with the tomatoes.
