Ingredients for 8 servings:

  • 300 g yogurt, Turkish or Greek (10% fat)
  • 300 g mayonnaise (salad mayonnaise)
  • 250 ml Ayran
  • 80 ml tomato ketchup
  • 1 clove(s) garlic
  • 4 tsp sugar
  • 2 tbsp lemon juice
  • 4 tsp sweet paprika powder
  • 1 tsp paprika powder, hot
  • ¼ tsp salt
  • ½ tsp coriander powder
  • ½ tsp cumin, ground
  • 20 g dill, fresh or frozen
  • 10 g parsley, fresh or frozen
  • some chili flakes (Pul Biber)

Instructions

Working time approx. 5 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 5 minutes

Mix all ingredients (except the pul biber) in a bowl. Now adjust the pul biber to your taste. But be careful, it will steep quite a bit! Let it steep for at least 2 hours, but overnight is better. The longer steeping time will improve and intensify the flavor, and it will also eliminate the crumbly feeling on your tongue from the undissolved spices!
