Ingredients for 4 servings:

  • 200 g lamb’s lettuce
  • 125 g bacon cubes
  • 125 g walnuts, roughly chopped
  • 2 tsp sugar
  • 1 cup sour cream
  • 2 tbsp maple syrup
  • possibly milk for dilution

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Lamb’s lettuce with caramelized walnuts, bacon and maple syrup cream

Wash and trim the lamb’s lettuce, and drain well. Fry the bacon in a pan, add the walnuts, and toast briefly until it smells deliciously nutty. Sprinkle the sugar over the lettuce and melt while stirring. Make sure the sugar doesn’t stick to the bottom of the pan, but spreads over the nuts and bacon. Transfer the lettuce to a bowl and spread the nut mixture on top. Mix the sour cream with the maple syrup and thin with milk if desired. Pour over the salad just before serving and mix everything well. It’s a great side dish for roasts or game. The salad will even taste good the day after serving if stored in an airtight container in the refrigerator.
