Almond rolls

Ingredients for 4 servings:

  • 150 g ground almonds
  • 2 tbsp almond flour, defatted
  • 35 g psyllium husks, ground
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp apple cider vinegar
  • 3 pieces of egg white
  • 175 ml boiling water

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Low-carb, gluten-free

Combine the dry ingredients, then stir in the vinegar and egg whites. This will create a slightly crumbly mixture. Then stir in the boiling water until it forms a sticky mass. Form 4-5 large rolls or 8 small rolls, place them on a baking sheet lined with parchment paper, and bake for about 60 minutes at 180°C. Be patient, as the rolls will only expand after about 30 minutes. Let the rolls cool briefly and enjoy.
