Ingredients for 6 servings:

  • 2 kg red bell pepper(s)
  • 3 m.-sized onion(s)
  • 3 large carrots
  • 5 tbsp oil, neutral
  • 2 tbsp apple cider vinegar
  • 2 tbsp ketchup (curry)
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Peel the peppers with a vegetable peeler to prevent them from tasting bitter later, and then remove the seeds. Quarter the peppers and cut into small pieces. Peel the carrots and slice into rings. Peel, halve, and slice the onions. In a bowl, combine the apple cider vinegar, ketchup, tomato paste, and sugar. Heat the oil in a saucepan and sauté the vegetables for about 30 minutes. Season with salt and stir in the apple cider vinegar mixture. Can be eaten hot or cold.
