Baked goat cheese on peaches

Ingredients for 4 servings:

  • 4 peaches
  • 1 pack of goat cheese (roll)
  • 1 small onion(s)
  • 2 tbsp olive oil
  • n. B. Thyme, fresh
  • pepper
  • Honey
  • e.g. sour cream

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Wash, pit, and skin the peaches if desired. Cut the peach halves into thin wedges and the goat cheese into 8 equal pieces. Peel the onion and slice it into wafer-thin rings. Arrange the peach pieces among 8 ovenproof, oiled dishes. Place a slice of cheese on each. Heat olive oil in a pan, add the onion rings, and sauté until golden brown. Wash and dry the thyme, and pluck the leaves from the stems. Sprinkle the onion rings with the oil and thyme leaves over the goat cheese. Season with freshly ground pepper and bake in a preheated oven at 200°C for about 10-15 minutes until golden brown. After baking, drizzle with honey and a dollop of sour cream. Feta cheese works well instead of goat cheese. Served with a warm baguette.
