Ingredients for 1 servings:

  • 250 g fig(s)
  • 250 g sultanas (raisins)
  • 150 g hazelnuts
  • 220 g raw cane sugar
  • 1 tbsp cocoa powder
  • 1 tbsp cloves
  • 2 tbsp cinnamon
  • 1 tbsp allspice
  • 75 ml rum
  • 800 g apples (sour ones like Topas)
  • 500 g Flour (whole grain spelled)
  • 1 pack of cream of tartar baking powder
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 13 hours 50 minutes

Chop the figs into small pieces and grate the nuts coarsely. Mix the figs, sultanas, nuts, cocoa, sugar, and spices (cinnamon, cloves, allspice, salt) in a large bowl. Then quarter the apples, remove the cores, grate them with the skin, and add them to the dry ingredients along with the rum. It’s best to leave them covered overnight to infuse. The next day, mix with flour and baking powder. Form two loaves and bake in the oven (do not preheat) at 150°C for about 1 1/2 hours. Cover if necessary. Sultanas brown quickly. If well cooled and left to infuse for a few days, they taste particularly good with butter on top.
