Fennel winter soup

Ingredients for 2 servings:

  • 1 bulb(s) of fennel
  • 2 carrots
  • 250 ml broth (delicatessen broth)
  • 1 garlic clove(s)
  • 250 ml carrot juice
  • 1 tbsp Dijon mustard
  • salt and pepper
  • some parsley, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

warms you up well after a nice winter walk

Cut the fennel bulb into small cubes, grate the carrots, and place them in a saucepan. Add the carrot juice and broth. Bring everything to a boil, then simmer. When the vegetables are nice and soft, add the mustard and crushed garlic. Season with salt and pepper and bring back to a boil briefly. Sprinkle with parsley.
