Ingredients for 2 servings:
- 400 g spinach, young, frozen or fresh
- 1 small onion(s)
- 1 garlic clove(s)
- 1 bay leaf
- 10 cocktail tomatoes or mini Roma
- olive oil
- Salt or vegetable stock powder
- Black pepper, freshly ground
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Finely chop the onion and garlic clove and sauté in heated olive oil until translucent. Add the bay leaf, halve the tomatoes, remove the seeds, and sauté with the onion and garlic mixture for a few minutes. Now add the spinach, cover, and heat until thawed. Season to taste with salt or vegetable stock and freshly ground pepper. Remove the bay leaf before serving. This spinach makes a wonderful accompaniment to fish and mashed potatoes or Alberto’s fragrant potatoes, which can be found here in the recipe database.
