Ingredients for 2 servings:

  • 1 jar salted herring(s) (Birmarck herring or matjes)
  • 2 apples
  • 2 onions, red
  • 250 g quark
  • 1 cup of cream
  • dill
  • salt and pepper
  • Lemon juice (only for matjes or salted herring)

Working time approx. 15 minutes; Total time approx. 15 minutes

Creamed herring

Remove the skin from the Bismarck herring (you can eat it if you like) and cut it into bite-sized pieces. Peel and core the apples, and also cut them into pieces. Peel the onions, halve them, and slice them. Mix everything with the quark. Whip the cream until stiff and fold it into the mixture. Season with salt, pepper, and dill. If using salted herring or matjes, add a little lemon juice. Delicious with boiled potatoes or bread.
