Cheese fried egg on spinach noodles

Ingredients for 2 servings:

  • 2 eggs
  • 2 slices of cheese (e.g. Tilsiter)
  • 1 package of spinach (cream-frozen product approx. 450g)
  • 200 g pasta (e.g. mini penne)
  • Salt
  • nutmeg
  • some butter
  • some milk

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Lightning meal

Place the spinach in a microwave-safe bowl, season with salt and nutmeg. Cover with a plate and cook in the microwave on high for about 14 minutes. Just before the end of the cooking time, add a little milk (about 2 tablespoons) and stir. In the meantime, cook the penne according to the package instructions. Once the pasta is in the water, melt some butter in a non-stick pan and line the pan with the cheese slices. Let the cheese melt a little until it looks nice and creamy. Then crack the eggs on top, season with salt, and cook slowly until done. Place the pasta and spinach on the plate, add the cheesy egg, and you’re done. If you work in this order, you’ll have a very inexpensive and simple dish in 15 minutes.
