Pasta with feta cheese, peppers and tomatoes

Ingredients for 4 servings:

  • 400 g spaghetti or other pasta
  • salt water
  • 1 large onion(s), red
  • 1 garlic clove(s)
  • 1 bell pepper(s), green
  • 3 large tomatoes
  • 200 g sheep’s cheese
  • Olive oil, good
  • some sambal oelek (1 – 2 tsp)
  • Salt and pepper, black
  • herbs, Italian

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Cook the pasta in salted water as usual, drain, and set aside. In the meantime, finely chop the onion, garlic, and bell pepper, and roughly dice the tomatoes and feta cheese. Heat a little olive oil in a pan and sauté the onions with the garlic and bell pepper. It shouldn’t brown, but should remain slightly crunchy. Add the sambal oelek and stir briefly. Add the pasta, tomatoes, and feta cheese, mix everything well, and let it warm through. Season with pepper, salt, and herbs. It’s best to add another good splash of olive oil so it doesn’t dry out. I like the pasta simply with salad. As a main course, it serves about 3 people, or as a side dish for 4 people.
