Ingredients for 4 servings:

  • 100g quinoa
  • 1 avocado(s)
  • 1 m.-sized mango(s)
  • 1 pomegranate
  • 1 lemon(s), to taste
  • 2 tbsp agave syrup or other sweetener
  • salt and pepper
  • e.g. chili flakes

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook the quinoa according to the instructions and let it cool slightly. To speed up the cooling process, you can rinse the finished quinoa with cold water. Deseed the pomegranate. Peel the avocado and mango and cut into cubes. It works best if the avocado and mango cubes are the same size as the pomegranate seeds. Squeeze the lemon and mix the juice with the agave syrup, a little salt, and pepper to make a dressing. Combine everything in a bowl and mix well. Let the salad sit for a moment and enjoy. Tip: If you like it spicy, garnish the salad with chili flakes. This gives it that extra kick.
