Bread and butter pudding

Ingredients for 2 servings:

  • 8 slices of toast
  • 250 ml double cream
  • 300 ml milk
  • 1 vanilla pod(s)
  • 6 eggs
  • 130 g sugar
  • 4 cl Baileys Irish Cream
  • 2 bananas
  • 3 tbsp pine nuts

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cube the bread, place it on a baking sheet, and toast it briefly in the oven. Bring the double cream and milk to a boil with the seeds of a vanilla pod. Beat the eggs with the sugar and Baileys until frothy. Whisk the boiling milk into the egg mixture. Peel the bananas and thinly slice them. Line a buttered, ovenproof dish with the cubes of bread, then top with the banana slices and fill with the egg mixture. Finally, sprinkle the pine nuts over the banana/egg mixture. Bake in the oven at 180°C (155°C fan, gas mark 3) for about 25 minutes.
