Ingredients for 2 servings:
- 1 small flatbread(s)
- 2 tomatoes, ripe
- 2 spring onions
- 2 bell peppers
- e.g. basil
- some olive oil
- some oregano
- some salt and pepper
- e.g. sausage, leftovers
- 200 g cheese, grated

Topped with leftovers
Preheat oven to 180°C fan/convection oven. Combine all of the sauce ingredients in a food processor. Cut the bread in half, spread the sauce on both halves, and sprinkle with half of the cheese. Top with the sausage and the remaining cheese. Sprinkle with some oregano if desired. Bake in the oven for about 10 minutes, until the cheese is melted and lightly browned. You can, of course, use other onions or ready-made tomato sauce. I prefer the freshly mixed sauce. I used chicken sausage for the sausage because it had to be eaten, and leftover grated Gouda and Cheddar for the cheese. I like to make fresh pizza dough, but if you’re in a hurry, this is a delicious alternative.
