Coconut turkey in spicy tomato sauce

Ingredients for 4 servings:

  • 500 g tomatoes, pureed
  • salt and pepper
  • Cayenne pepper
  • 1 pinch of cinnamon
  • 1 tsp honey or sugar
  • 200 g basmati or noodles
  • 500 g turkey breast fillet(s)
  • 100 g desiccated coconut
  • 3 tbsp oil

Working time approx. 30 minutes; Total time approx. 30 minutes

Exotic

Bring the passata to a boil and season with spices and honey for a spicy twist. Reduce to half the volume over low heat. Meanwhile, cook the rice or pasta according to the package instructions. Cut the meat into finger-thick pieces and season with salt. Mix the desiccated coconut with pepper in a deep dish and press the meat into the mixture. Heat oil in a pan and fry the meat over medium heat for about 6-7 minutes. Arrange everything on plates and serve hot.
