Ingredients for 4 servings:
- 4 slice(s) turkey schnitzel
- e.g. salt and pepper
- 2 tbsp mustard
- 4 sage leaves
- 4 slice(s) ham, air-dried
- 4 spring onions
- 3 tbsp flour
- 1 tbsp oil for frying
- 150 ml sherry
- 150 ml vegetable stock
- 1 cup of cream (200 g)
- 1 pinch(s) of sugar
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes
Halve the turkey cutlets and pound them like roulades. Season with pepper, a little salt, and mustard, then sprinkle with finely chopped sage. Then top with the raw ham and the sliced spring onions. Roll up and secure each one with a toothpick. Coat the rolls in flour and fry in a pan with hot oil. Deglaze with sherry, then add the vegetable stock and cream. Bring to a boil and simmer, covered, for about 30 minutes. Finally, season the cream sauce with a pinch of sugar and thicken if necessary.
