Turkey rolls with sage, ham and spring onions

Ingredients for 4 servings:

  • 4 slice(s) turkey schnitzel
  • e.g. salt and pepper
  • 2 tbsp mustard
  • 4 sage leaves
  • 4 slice(s) ham, air-dried
  • 4 spring onions
  • 3 tbsp flour
  • 1 tbsp oil for frying
  • 150 ml sherry
  • 150 ml vegetable stock
  • 1 cup of cream (200 g)
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Halve the turkey cutlets and pound them like roulades. Season with pepper, a little salt, and mustard, then sprinkle with finely chopped sage. Then top with the raw ham and the sliced ​​spring onions. Roll up and secure each one with a toothpick. Coat the rolls in flour and fry in a pan with hot oil. Deglaze with sherry, then add the vegetable stock and cream. Bring to a boil and simmer, covered, for about 30 minutes. Finally, season the cream sauce with a pinch of sugar and thicken if necessary.
