Schnitzel roulades with prunes

Ingredients for 4 servings:

  • 4 pork schnitzels
  • 4 slices of bacon
  • 12 small prunes
  • 100 g cream
  • salt and pepper
  • Paprika powder
  • Mustard
  • 100 ml dry white wine
  • 30 ml water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Flatten the schnitzel. Season with salt, pepper, and paprika, and spread with mustard. Top each schnitzel with a slice of bacon and two prunes and roll up. Secure with a toothpick. Sear the schnitzel in a little clarified butter. Deglaze with white wine and a little water. Chop the remaining prunes and add to the sauce. Cover and simmer for about 30 minutes. Add the cream and bring to a boil. Season the sauce again, if desired. Dumplings and spaetzle are recommended as side dishes.
