Carrot noodles with sausage balls

Ingredients for 4 servings:

  • 350 g bratwurst, raw
  • 600 g carrot(s)
  • 1 bunch of chives
  • 2 tbsp tomato paste
  • 100 g quark (low-fat quark)
  • 100 g cream
  • 300 g pasta
  • 2 tbsp curry powder
  • 2 tbsp oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, wash, peel, and quarter the carrots. Then cut them into finger-length sticks. Cut off the sides of the sausages and press the sausage meat into a bowl. Finely chop the chives and knead them with the quark, the sausage meat, and a little curry powder. Moisten your hands and form the mixture into small balls. Heat a little oil in a deep, non-stick frying pan and fry the balls all over. Then remove and set aside. Heat the remaining oil and briefly sauté the remaining curry powder. Add the carrot sticks and tomato paste. Fry briefly, then season with salt and pepper and deglaze with the cream. Add the meatballs on top and cook everything covered for about 15 minutes. Cook the pasta according to the package instructions until al dente. Drain and mix with the carrot and meatball sauce. Serve hot.
