Ingredients for 4 servings:

  • ½ kg beetroot, fresh, not from the jar
  • 8 fish fillets (matjes fillets)
  • 1 large apple
  • 2 large gherkins
  • 200 g sour cream
  • 200 g crème fraîche
  • 1 dash of cream
  • salt and pepper

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

quick and easy, still tastes great after 2 days!

Cook the beets or cut the store-bought ones into small cubes (wear gloves, as beets stain quite a bit). Cut the herring fillets into smaller cubes. Repeat with the peeled apple and cucumbers. Then carefully mix all the ingredients and season to taste. Finally, add a dash of cream to make the salad a little more supple. Refrigerate the salad and let it sit for a few hours. This will give the salad its beautiful red color. This goes wonderfully with fresh white bread, and if you prefer something heartier, serve it with fried potatoes.
