Briefly rinse the herring fillets under running water. Taste a piece of the fish; if it’s still too salty, place the fillets in a bowl of mineral water or milk for about 30 minutes. Mix the cream, sour cream, mayonnaise, and the cucumber juices to make a sauce, and season with sugar and freshly ground pepper. Salt is generally not necessary, as the fish releases enough salt into the sauce. Wash, peel, and core the apples and thinly slice them, as well as the gherkins. Peel the onion, slice it into thin rings, and add it to the sauce with the apple and cucumber slices. Then fold in the herring fillets and let everything marinate in the refrigerator for about 2 hours. Garnish with dill before serving. Serve with boiled potatoes or hearty whole-grain bread.
