Ingredients for 10 servings:

  • 1 kg matjes fillet(s), cut into 2cm pieces
  • 2 large sweet and sour apples, diced
  • 1 jar gherkin(s), diced
  • 200 g shallot(s), finely diced
  • 200 g sour cream
  • 250 g low-fat yogurt
  • 3 sprigs of tarragon, roughly chopped
  • 3 sprigs hyssop, roughly chopped
  • 3 sprigs of dill, coarsely chopped
  • 1 bunch parsley, coarsely chopped
  • 1 pinch(s) of sugar
  • Salt and pepper, ad mill

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Gently mix the ingredients, from herring fillet to yogurt, season to taste with the cucumber water, sugar, salt and pepper, place on a nice platter and cover with the herbs.
