White currant jelly with gin and thyme

Ingredients for 6 servings:

  • 900 ml white currant juice
  • 5 tbsp gin
  • 2 stalks of thyme
  • 4 juniper berries
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Combine the fresh white currant juice and the other ingredients in a large saucepan. Add the thyme, gin, and crushed juniper berries. Stir in the gelling sugar and bring to a boil while stirring. Boil gently for 3-5 minutes, stirring vigorously. After three minutes, check for settling. Then pour into clean jars and seal tightly.
