Ingredients for 1 servings:

  • 1,300 g nectarine(s)
  • 500 g onion(s)
  • 30 g ginger
  • 1 clove(s) garlic, (to taste)
  • 400 g cane sugar (or 200 g each of cane sugar and gelling sugar 1:1)
  • 1 tbsp mustard, medium hot
  • 1 tsp turmeric
  • 1 tsp clove powder
  • 1 tsp cumin, ground
  • 1 tsp cinnamon powder
  • 1 tsp salt
  • 250 ml Balsamic vinegar, white
  • 1 red chili pepper(s), finely diced, to taste

Working time approx. 40 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 40 minutes

Finely dice the nectarines and onions. Peel the fresh ginger and finely dice or grate it. Add garlic and chili to taste. Mix all ingredients thoroughly in a tall saucepan, bring to a boil while stirring, and then simmer gently for about 1 hour. It is important to stir the chutney while simmering to prevent it from sticking. When the mixture has thickened, pour it into twist-off jars while still hot. Depending on the size of the jars, this makes 6-8 servings. The chutney will keep for at least 1 year and tastes delicious with grilled or stir-fried dishes, rice and pasta, cheese, or as a spread. Store opened jars in the refrigerator.
