Ingredients for 1 servings:
- 3 kg zucchini
- 1 kg onion(s)
- ¾ liter vinegar (wine vinegar)
- 500 g sugar
- 3 tbsp mustard
- 4 tbsp flour
- 3 tbsp curry powder
- 3 tbsp paprika powder, sweet
- 3 tbsp paprika powder, hot
- 1 tbsp cayenne pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Deseed the zucchini and cut into thick pieces. Cut the onions into thick slices. Salt both and let them steep. After 3-4 hours, press the liquid through a sieve. Simmer with vinegar, sugar, and mustard for 45 minutes. Mix the flour with cold water, then add the spices, stir everything into the zucchini, and cook for 10 minutes. Then pour into jars and turn them upside down until they cool. This way, the chutney will keep for a long time.
