Ingredients for 2 servings:

  • 6 eggs
  • 2 Mettwurst (Pfefferlinge), long, thin
  • 2 m.-sized onion(s)
  • 1 bunch of chives
  • Salt
  • Rapeseed oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

that’s how I’ve known it since I was little

Cut the Mettwurst into small slices and fry them in a pan until crispy on both sides. Then remove from the pan. Whisk the eggs in a bowl, stir in the finely chopped onions and chives. Add the fried Mettwurst and season with salt. Be careful, the Mettwurst will also impart flavor. Pour the mixture into the heated pan and fry well, tearing it apart. If you like, you can serve it with a slice of dry brown bread.
