Tortellini salad with hemp seeds

Ingredients for 1 servings:

  • 200 g tortellini (filling as desired)
  • 100 g pesto (pepper pesto)
  • 1 tomato(s)
  • e.g. chives
  • n. B. hemp seeds
  • 1 tsp olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Bring salted water to a boil and cook the tortellini until tender (approx. 6-10 minutes). Then drain the water. Quarter the tomatoes, remove the cores, and scoop out the quarters. Cut the tomato flesh into small cubes. Toast some hemp seeds in a pan with olive oil until they turn light brown and develop their full, nutty aroma. If you don’t have hemp seeds, you can also toast pine nuts or something similar. However, I find the hemp spice very tasty and suitable. Mix the tortellini, diced tomatoes, pesto, toasted hemp seeds, and chives in a bowl and enjoy.
