Strawberry-chili-nettle jam

Ingredients for 1 servings:

  • 1 kg strawberries
  • 500 g gelling sugar 2:1
  • 1 tsp, leveled chili powder or cayenne pepper
  • 15 g nettle leaves, approx. 15 larger tips
  • 2 tbsp lemon juice
  • 1 packet of vanilla sugar

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 50 minutes

makes about 6 glasses

Wash, stem, and chop the strawberries. Mix with the gelling sugar and let stand. Meanwhile, wash the nettle leaves and chop them very finely with a chef’s knife. Puree the strawberries, add the chili powder, vanilla sugar, lemon juice, and the chopped nettle leaves, and mix well. Let everything simmer for 4 minutes, test for set, and pour into jars.
