Tortellini salad

Ingredients for 4 servings:

  • 500 g tortellini with cheese filling (refrigerated counter)
  • 500 g cherry tomatoes
  • 500 g fresh mushrooms (e.g. mushrooms, chanterelles or similar – preferably chanterelles)
  • 250 g ham (Katenschinken), diced or smoked bacon
  • 1 jar Miracle Whip Balance
  • 1 m.-sized onion(s)
  • 3 garlic cloves
  • 1 bunch arugula
  • salt and pepper
  • some balsamic vinegar
  • Sugar
  • possibly pine nuts

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the tortellini according to the package instructions. Peel and dice the onion and garlic. Clean and slice the mushrooms. Clean and halve the cherry tomatoes. Clean the arugula and tear or cut into small pieces. Brown the diced ham (or bacon) in a pan. Add the onion, garlic, and mushrooms and continue to cook together. Deglaze with a little balsamic vinegar. Transfer to a suitable bowl. Drain the tortellini and then toss with the bacon, mushroom, and onion mixture. Add the Miracle Whip and fold in. Finally, add the halved cherry tomatoes and arugula and mix in. Sprinkle with toasted pine nuts, if desired. Finally, season with salt, pepper, and a little sugar.
