Ingredients for 1 servings:

  • 2 kg apricot(s)
  • 2 vanilla pods
  • ½ bottle of bitter almond flavor
  • 3 sachets of gelling powder (Opekta)
  • 1 kg sugar
  • 2 cl Amaretto
  • 1 lemon(s)

Working time approx. 30 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 30 minutes

very tasty, easy, even for beginners

Wash the apricots, pat dry, and remove the stones. Dice them and place them in a non-stick saucepan. Split two vanilla pods lengthwise and scrape out the seeds with a knife. Stir them into the diced apricots, then add the vanilla pods as well. Squeeze the lemon, mix the juice and two-thirds of the sugar with the apricots, and let it steep, covered, for 1.5 hours. Add the bitter almond flavoring and Amaretto and bring to a boil while stirring. Fish out the vanilla pods and puree the mixture. Mix the remaining sugar with the 3 sachets of Opekta (gelling agent) in a bowl and stir into the apricot mixture. Bring to a boil as directed on the gelling agent packaging, test for settling, and pour the jam into sterile twist-off jars.
