Ingredients for 1 servings:

  • 2 kg plums
  • 300 g brown sugar
  • 2 tbsp vanilla sugar
  • 1 ½ star anise, finely ground
  • ½ tsp cinnamon
  • ½ tsp cardamom
  • ½ tsp ginger powder
  • ½ tsp clove powder
  • 1 shot of Amaretto

Instructions

Working time approx. 1 hour 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 3 hours 30 minutes

First, pit the plums, quarter them, and wash them thoroughly. Place them in a large pot with the sugar, spices, and liqueur, and let them draw their juice for about 2 hours. Then simmer for 15 minutes. If the plums are still too firm, simmer a little longer. Season to taste. I find it sweet enough, but you can add more sugar if you like. While still hot, pour into jars, seal, and let cool for a few minutes. We think the compote tastes great over cream or vanilla pudding, or on yogurt.
