Quark pancakes with cereal flakes

Ingredients for 10 servings:

  • 500 g quark
  • 300 g spelt flakes or oat flakes
  • 4 eggs
  • 1 tsp, leveled baking soda
  • e.g. milk
  • Fat for frying

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

without flour, easy and quick

Blend all ingredients thoroughly in a blender or with an immersion blender, then let stand for about 10 minutes. The spelt flakes will then expand slightly. If the batter is too thin, simply add more flakes; if it’s too thick, add a splash of milk. If you don’t have baking soda, you can substitute it with baking powder or omit it altogether. Cook about 10 pancakes in a medium-hot pan with a touch of clarified butter, margarine, or something similar. Serve with maple syrup, agave syrup, or whatever you like.
