Ingredients for 1 servings:

  • 300 g flour
  • 200 g sugar
  • 300 g butter
  • 1 packet of baking powder
  • 4 eggs
  • 1 egg(s)
  • 250 g sour cream
  • 2 tbsp cocoa powder
  • 150 g coconut flakes
  • Food coloring, green, liquid
  • 250 g fondant, yellow
  • 250 g powdered sugar
  • Food coloring, red
  • 1 muffin tray for 36 mini muffins
  • 36 paper muffin cases

Instructions

Working time approx. 1 hour 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 30 minutes

Burger muffins for a child’s birthday party or as an eye-catcher on the cake buffet / enough for about 36 mini muffins

Combine all the batter ingredients, except the cocoa powder and 1 egg, in a bowl and mix with a mixer. Divide the batter in half. Mix one half with the cocoa powder. You’ll need one egg later and can be mixed in a cup. Pour the light batter into mini muffin tins and bake at 180°C (convection oven or 200°C (top/bottom heat)) for 10-15 minutes. 1-2 minutes before the end of the baking time, remove the muffins, brush them with the egg, and sprinkle some coconut flakes on top. (These are to represent the sesame seeds on the “bun”). Finish baking. Let cool. Pour the chocolate batter onto a baking sheet and bake at 180°C (350°F). Let cool. Decoration: First, cut the muffins in half, simply cutting a lid off the top. Mix the coconut flakes with the green food coloring. This will later become the lettuce on the burger. Set aside. Roll out the yellow fondant and cut into 2.5-3 cm squares. This will later be the cheese on the burger. Use a cookie cutter to cut out circles from the chocolate dough that are the same diameter as the muffins. These circles will be the meat. Mix some powdered sugar with a little water. This will act as glue. Use the powdered sugar glue to “glue” the chocolate circles to the bottom halves of the burger. Using the powdered sugar glue, also glue the fondant squares to the chocolate circles. Now mix some powdered sugar with the red food coloring. This will be the ketchup. Spread the red sauce on each burger. Sprinkle the green-colored coconut flakes on top of the sauce on each burger. Finally, glue the top halves of the burgers on again with a little powdered sugar glue. Done.
