Spätzle with lentils

Ingredients for 4 servings:

  • 200 g lentils, brown
  • 500 g Spätzle, homemade or ready-made
  • 1 large onion(s)
  • 125 g bacon, diced
  • 500 ml meat broth
  • some olive oil
  • some butter
  • some salt and pepper
  • 2 tbsp vinegar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 25 minutes

Peel and dice the onion. Sauté the lentils and diced onion in olive oil. Pour in the meat broth and bring to a boil. Then, covered, simmer over low heat for about 60 minutes until tender. Fry the diced bacon in a pan. When the lentils are ready, melt butter in a pan and fry the spaetzle in it. Stir in the lentils and bacon and heat through. Season to taste with salt, pepper, and vinegar.
