Sweet and spicy turkey with bacon and pineapple, topped with Brie

Ingredients for 4 servings:

  • 150 g bacon
  • 300 g turkey schnitzel
  • 1 can pineapple, in pieces
  • 3 chili peppers, dried
  • 200 g cheese (Brie)
  • 1 tsp broth
  • 4 tbsp ketchup
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Dice the bacon and cut the turkey cutlets into finger-thick strips. Add the bacon cubes to the still-cold pan and slowly fry the fat over medium heat. Remove the bacon from the pan and fry the turkey strips in the remaining fat. Season the meat with salt and pepper and crumble in the dried chili. Add the pineapple pieces and bacon to the meat, pour in half of the pineapple juice from the can, mix in the ketchup and stock, and simmer for about 5 minutes. Then transfer everything to a baking dish, slice the Brie, and place it on top of the meat. Bake at 200°C (convection oven) for about 15 minutes. Serve with rice and baguette.
