Ingredients for 1 servings:

  • 400 g speculatius biscuits
  • 100 g powdered sugar
  • 50 ml milk
  • 2 cl Amaretto, (2-4 cl to taste)
  • 2 tbsp cocoa powder (sweetener)
  • some desiccated coconut, for tossing

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 200°C. Now pat the speculatius cookies into crumbs using a rolling pin or ladle. Dissolve the icing sugar in the milk and Amaretto and add to the bowl. Halve the resulting dough and add the cocoa to one half. Both should be firm doughs (add icing sugar or cocoa if necessary). Form both doughs into balls, roll them in coconut and place them on a baking tray lined with baking paper. Turn the oven down to 150°C and heat the balls for approx. 10 minutes. Let them cool slightly and then reshape the balls. Roll them again in desiccated coconut and let them cool completely. Keep refrigerated to keep firm. Makes approx. 12 larger balls.
